Victorinox knives feature a taper ground beveled edge. The knives are thicker on top, and thinner as well as extremely sharp on the edge. They are not hollow ground. The No-Stain steel used in the blade resists rusting and can be easily steeled and sharpened. The “Fibrox” (plastic) handle has an ergonomic design and a gritty finish which allows for increased safety when the handle is wet or greasy. Fibrox handles are NSF Approved.
